COOKING OILS
There are several different ways of preparing food at home and ever since the arrival of the Microwave, less and less people are usen their ovens, slow cooker and pans. The microwave has several disadvantages when compared to the other traditional ways of cooking because the radiation it emits literally destroys all the nutrients in the food. This is why microwave food is unsatisfying.
Additionally, microwave ready food is generally very high in sodium (salt) because flavors are also destroyed by microwave radiation.
This is why I’d like to discuss the different cooking oils available to those individuals who are interested in taking the dust off their pots and pans and putting them to good use.
As most know, the best oil as far as nutritional value is Olive oil (preferably extra virgin). Unfortunately, what most people don’t know is that Olive oil is very sensitive to heat and looses its nutritional properties when it is used for cooking at high temperatures (such as frying).
To really take advantage of Olive oil, it is recommended it be used raw as salad dressing of for dishes that will be baked at low temperatures.
When it comes to cooking at high temperatures, the best oil is Grape Seed oil which is not only cheaper but holds its beneficial properties at much higher temperatures than other oils. Grape Seed is relatively new for most people but has been around for centuries and studies show it does not cause any known health issues.
The next oil I would like to discuss is my worst enemy! And that is Canola oil. Why? Because recent studies have proven that the “benefits” listed on its label are only true so long as the oil is fresh and raw.
Once canola oil is heated it turns into Tran saturated fat which clogs up the arteries and increases bad cholesterol while lowering the good cholesterol.
This is actually true for most vegetable oils. Science has discovered saturated fat (animal) is not as bad for your health as Tran saturated fat (vegetable).
Vegetable oils such as corn, safflower, Crisco, etc. where introduced in the 1950s when less that 15% of the population in the US suffered from High blood pressure, Cholesterol, stroke, etc. Back then people used mostly butter and lard to cook.
From then until now, cardiovascular disease has become the number one cause of premature death in the US followed by diabetes. This leads me to believe that saturated fat so long as consumed in small amounts is actually better than imitation products such as Crisco.
But before running to the store to buy lard, keep in mind that most grocery stores only carry processed lard which has the disadvantage of having both Saturated and Tran saturated fats. The solution:
Always choose what is unprocessed, natural. If you can find real lard then great! But remember extra virgin Olive oil and Grape Seed oil are good choices too.
